If you want to build large statues specifically, then look into how builders create curves using blocks (which is how they traditionally create statues). Perusing the instructions of sets like #7194 and #10018 could give you some ideas - or even better, if you have the time and money, build them yourself!

I would have to say my worst build has to be 7194 Yoda. It was basically stacking brick on top of brick with no unique building techniques or design. I personally enjoyed building the Fire Brigade.
