Just out of interest when building official Lego set vehicles in countries like Australia and the UK do people build them right hand drive instead of left hand drive to match your local situation or just leave them as instructed?

Personally I "convert".

    I remove the steering altogether so that it can be for either market.

    It depends on the model and its intended use. Normally I wouldn't bother but I converted the bus shown below as I needed the doors opening on the left.

    I seem to recall a frontpage review where Huw converted a large Technic set, rally car or GT3, to right-hand drive. It's been awhile though. Most City vehicles the driver is just plopped in the middle and there is no room for sides.

    I always built my #8860 with steering on the right, but for some reason it was never as smooth.

    For me, it depends on the car. For standard vehicles, such as the following, I converted to RHD:
    #60152 Sweeper & Excavator
    #60097 City Square - LEGO truck & flat-bed transporter
    #70805 Trash Chomper - In standard dump-truck form

    However, some I have left, as that's the way they should be, such as:
    #10260 Downtown Diner - Pink Cadillac

    for the vehicles that are wide enough, yes i convert them to right hand drive.

    For #60182 this seemed much more a North American style fifth wheel & super duty, so I had to mirror build the trailer.  The only catch now though is the train door should be the ‘right’ version rather than the ‘left’.
