I did create a sort-of MOC, using two copies of #21102 Minecraft Micro World: The Forest (one in original form and the other completely rebuilt) and one of #21105 The Village, but this was very limited by the bricks, tiles and plates that were in the original set and was obviously not specifically designed to mimic any of the full scale sets.
As @Bumblepants said, the challenge would be on creating representations of the various sets, whilst adhering to the 6x6 base format in a sensible way. The other option, of course, would be to entirely throw that out and just scale everything down by a factor of 2, perhaps, and seeing where it took you.
