At the moment, I think #70593 The Green NRG Dragon is my current favourite. It's large, has some great green parts, the head looks fantastic and as for those wings... :-)

Still hoping to pick up the two baby Elves dragons I'm missing! Other than that I think I'm mostly content with my collection for now.
Favorite dragon? Tough question! I really love both Master Wu Dragon and Elandra the Queen Dragon. Master Wu Dragon is more rugged and angular, while Elandra is more streamlined and graceful. Master Wu Dragon has two more points of articulation (20 vs. 18), while Elandra is a lot bigger and more muscular. I'm not sure I can pick a favorite out of those two.

My favourite would probably be the Morro dragon if I had built it, but so far it's the ultra dragon.
And looks like I've got 18 of them (29 including duplicates), though surprised to see lots of dragons under the Elves theme :)
That's not even all of the dragons I own! I also have Dragon Bolt and one of the classic 90's dragons, and all the dragon-esque Mixels (if they count) (not pictured). In fact, the only dragons I don't have are the Hungarian Horntail, the 2 large Creator dragons, the Ollie sculpture and a couple of others. I even had a Hungarian Horntail a few years ago, I really regret ever selling it on. I think it's safe to say that LEGO know that the way to the contents of my wallet is through dragons!
As for favourite dragon, the Green NRG dragon and Smaug are tied for my favourites. I just really really like foldable wings.

By my quick count, I have at least 58-- but about 20 of those are "baby" dragons like Norbert and the baby Elves dragons. And I'll bet I've got a bunch more unaccounted-for classic green/black dragons, since I believe I got a bunch in unsorted lots over the years. So... maybe 60-70 all told?

Personally, nothing tops the castle dragons that I have from the 90's sets. Those are truly fit to form.
Kanohi Dragon and Phase Dragon were building contest entries that ended up getting published in the "Bionicle: Rahi Beasts" guide book and incorporated into the Bionicle story. The Hordika Dragons were an entry in a similar building contest the next year that were published in the "Bionicle: Dark Hunters" guide book. But none of those three were ever released as sets.
From a nostalgic perspective I like those older dragons, but these days both brick-built and molded dragons tend to have a lot more posability (6 points of articulation was a lot for a LEGO creature back then, but today even the most basic LEGO Castle dragons offer twice that). Also, I've come to greatly prefer colored eyes, whether printed or brick-built, over molded cavities like the old shark, crocodile, and dragon. LEGO "people" have colored eyes, so why not LEGO animals and monsters as well?

The other Bionicle dragons sound like they probably shouldn't be included, since LEGO didn't design them and no formal instructions seem to have been released. Seems like including those would mean we'd have to include "mentioned" dragons in other storylines or otherwise, which is too much for my tastes.
And of course, we know about a few upcoming dragons in Ninjago and Elves, too, as I recall. But no pictures yet (that I'm aware of).

Of course, "traditional" is a pretty vague description, since European dragons even from the oldest legends and heraldry could vary wildly. Some had two legs and two arms like the LEGO Castle dragons, some had two legs and no arms like Smaug, some had four legs like the LEGO Elves dragons, and some had no legs at all!
I used to prefer molded dragons in many respects due to feeling more lifelike and truer to the style of the minifigure and other LEGO animals like the horse and crocodile. But I feel like brick-built creatures have evolved a lot due to new parts like curved slopes and the joint pieces from the Mixels sets. It says a lot when a brick-built dragon like Thorne, Zonya, or Elandra can fit in next to a mini-doll, despite the mini-doll having an even less blocky design language than the traditional minifigure. I see more potential for brick-built dragons to continue to evolve in the future than their molded counterparts.
I might be fonder of molded creatures if they were more customizable. I enjoyed the 2001 Dinosaurs sets, as unrealistic as they were, because I liked the sense of using the same system of parts to create many different types of creature. Newer dragon and dinosaur molds still have plenty of connection points and are much more customizable than 90s dragon and dinosaur molds, but don't give me quite that same sense of creative freedom that those Dinosaurs sets did.
I never liked the look of the "creature-system" Dinosaurs (used in dinosaurs, elephants, dewbacks, etc), since they looked... strange. Some creatures looked ok in that system, others just looked unnatural.
The brick-built dragons in Vikings started to give dragons a lot more articulation, but they didn't look as organic, since they used a lot of Bionicle elements that make them look more like dragon cyborgs. But they did offer much better articulation and customization! Ninjago is a bit better, but ... still a little too inorganic for me, generally.
I honestly think I like the style of the Elves dragons best, I think. They look pretty organic, they've got pretty good articulation, and they're about what "feels right" for the scale of a minifig-scale dragon. I haven't tried yet, but I'd love to copy the design of the Elves dragons in non-pastel colors, using other existing dragon heads, and see how they look.

I like the idea of the Elves dragons, but they're far, far, *far* too twee for me, I'm afraid! ;-)
@davee123, you're right that the Ninjago dragons can look a little "cyborg-ish", which I think fits the theme, but I agree that they wouldn't be great for a more "realistic" looking dragon.
I love Smaug from #79018, but that's just a little bit too molded for me. I would prefer something that looks a little more "built"... Having said that, Smaug is just an extension of "bigfigs", such as the troll from #9473 The Mines of Moria or Dogshank from #70604 Tiger Widow Island, as well as many others, so I do accept the design choice made.

I think the Bot Drop Dragon also gets a name in the show, but I'm way behind on the show so I've only heard that second-hand.
