Sets where buying multiple copies makes the most sense.
Seeing Huw's article about buying a second DO to fill it out made me wonder: what sets out there are made more complete by buying 2 (or more) copies? I know of a few off the top of my head - the Kingdom's Joust set, Battle at the Black Gate, and Horizon Express (of course, the argument could be made for any train of course).
I received a 2nd Mos Eisley Cantina for Christmas, and decided to keep it after realizing it looked a little sparse the way it was originally constructed. It also allows for the full array of band members, of course.
Any other good examples where buying and building with multiples made the finished product a great improvement? I'd love to see pictures too!

A second copy of #75005 Rancor Pit would be useful to create a full bottom level for #9516 Jabba's Palace.
Multiple copies of #9471 Uruk-Hai Army are useful when combined with #9474 Helm's Deep to create a more realistic Deeping Wall.

The forest animals monkey looks good if you have two or more.
Otherwise I agree with @piratemania7 - you never know when you just might want a spare sealed set of something - anything...!
It is a much better option (IMO) to buy a second palace as one is very small.
Here's mine - 2 palaces, 1 Pit + some extra bits and pieces.
