I would hope maybe something like a:
Train Station
Candy Shop
House (with a tree and stuff inside)
City Park/Commons with a large tree
Department Store
Candy Store
"Toy Factory"
A church would be really nice, but I don't expect it from LEGO.

Other ideas include:
A tree salesman (with lots of lego trees to cut down)
Old-fashioned city hall
Ski shop with a ski slope (we actually made one of these on our own and added Series MFs related to skiing)
I like the City Park too.
I like the idea of a plain house with reindeer on top too.
Actually, I think another item that is a glaring void is the lack of a very large white plate to build everything on. Now that would be nice! I'm tired of wasting lots of white legos covering up green plates. I would rather use my white legos for my ski slopes.

Besides I doubt there would be any drunkenness, not with all the LEGO Cops around...lol

Would like to see a Ski Resort with a lift, ice skating rink, or a city center tree lighting ceremony
I think a Santa's workshop would also be great if they decide to expand beyond the village and head to the North Pole.
I think a church would be fantastic. And despite the "Winter Village" name, this is a Christmas line, and Christmas is by definition religious. I mean, they make advent calendar's for goodness sake! They don't call them "countdown calendars", they call them Advent calendars, so they already sell religious items.
Anyway, I like the idea of a town square too, but we already have a pretty sizeable tree in the Winter Toy Shop so not sure how likely that is.
I imagine we'll see another Christmas train before it's through.
And I was also wondering if anyone has put together the holiday giveaway sets yet? Mine are still in boxes, but I was wondering if they are on a scale that we could see more sets over the years that would combine to make a house that would fit in with the Winter Village theme.
So, along the lines of a special theme like the winter village, such a building is not entirely out of the question...

I have actually just bought the inn through design by me but am yet to build it.
Love the Idea of a Santa's Workshop/Grotto that would be great
The church is nice too, and scale-wise, actually fits with the rest of the village, but I'd personally want a larger church.

Note: I did not build a lodge, just the hill with lego POB trees scattered across it. I then tossed in some of the various Series MFs that were snow-related (skier, snow boarders, etc.) and it actually ended up looking nice. It was easy to have an action scenes using lego connectors. I had one where a skier was in mid-air about to crash and burn with a wild look of panic in his eyes (sorta reminds me of....well...me). Good stuff...
As for potentional upcoming sets. I could wish for a house with tree, presents and ofc a turkey. Containing mom,dad two children and maybe a grandparent. A butcher and his wife and some customers + oldfasioned car - We can't have those minifigs starving right :-)

I'm from the Southern Hemisphere, so we get a summer christmas, but these winter sets look great.
Also @Rollo_Tomassi idea of a 3 in 1 Creator set would be fantastic!

also the holiday train is awesome, highly recommended. There's not enough room on my white base (a ikea pax shelf I got for a £1) but looks lovely running round the bottom of my tree.

(Comes with Santa, Ms. Clause, Elves, as minifigures, and some reindeer)
I'd suggest a town hall with a common area in the front with a large Christmas tree.
You can have a Mayor, Carolers, Sled Children, and some winter dressed minifigures.
I'd also suggest (as someone else has) a train station dressed out for the holidays.
(can come with a couple of porters, some winter dressed passengers, and a conductor as minifigures)
Another possibility is a ski lodge with a Christmas tree in the window on the inside.
Would it be feasible to have a Christmas Parade as part of the series?
