An alternative is to build it sighted, take it apart, then rebuild it blindfolded.

You then sit back to back with your partner and for the first 10 minute part only the person with the design sheet can talk and the person building isn't allowed to ask questions. At the end you look at what they got but still don't show them the sheet.
The next 10 minute section you do it again but the person building can now ask questions back. It is an interesting exercise in seeing how some people hear instructions and formulate what needs to be done when they have to make assumptions on the questions they have that they can't ask. Also shows how some people do/don't explain stuff well or lay out ground rules from the beginning on how they're going to give the instructions.
