  I'd go with something that you instinctively know the shape of, like a small car. So maybe the small car poly.
  
  An alternative is to build it sighted, take it apart, then rebuild it blindfolded.

  We did something like this at a LUG meeting. It is used for corporate team building to teach people that everyone thinks differently about things. The organizer for our LUG one just used a few different bricks in a couple colors (mostly 2x2, 1x4, 2x4 etc in black tan and green) and then pre-designed something in LDD and printed it from a couple views.
  
  You then sit back to back with your partner and for the first 10 minute part only the person with the design sheet can talk and the person building isn't allowed to ask questions. At the end you look at what they got but still don't show them the sheet.
  
  The next 10 minute section you do it again but the person building can now ask questions back. It is an interesting exercise in seeing how some people hear instructions and formulate what needs to be done when they have to make assumptions on the questions they have that they can't ask. Also shows how some people do/don't explain stuff well or lay out ground rules from the beginning on how they're going to give the instructions.

  Just visited my local lego store and picked up 3 sets of #31001 as a 3 in 1 model it means that I can either have different teams building different models or run the game or variations of it based on suggestions multiple times while hopefully keeping it entertaining.
  
  @rancorbait who doesn't like lego? It's my party they'll do what I tell them ;-) (I'll let you all know how it goes)

  Blindfolded doesn't seem a great idea tbh, a better idea might be having one person being able to see the model, describing how to build it, might work better for small MOCs.

  Looking at #31001 you could have couples building it, with the photograph available but no instructions. That could be fun!

  Or just tell them to build it with no picture or instructions, see what they all come up with? Something random like a Pudsey bear or something

  Or perhaps without the blindfold but the one with the instructions can't speak, a kind of lego charades?
