From a "wish list" point-of-view, a Red Dwarf set including the "Boys from the Dwarf" minifigs and a couple of Scutters:

1. Robber's den - a little shack on top of a rocky outcrop surrounded by trees, where he can hide his loot and see enemy knights coming from a long way off. There can be a rope or a ladder for him to climb up which can be pulled up to prevent anyone else getting in.
2. Turn the bricks from a hill into a hermit's cave, with trees surrounding it, a few animals like an owl and a rat and maybe a recoloured dog or something to represent a fox, and some mystical set dressing like a crystal ball and one of those printed tiles with an old scroll on it. The knight could be coming to the hermit (actually the robber from earlier, with a change of cloak and a cowl) to seek his wisdom because he's on a quest to find...
3. Ruined tower - the knight from earlier is on some kind of Grail quest, and he finds his heart's desire in a ruined tower half hidden by trees - what treasure lies within? And will the robber get to it first?
Obviously, you'd need actual gray bricks for this instead of BURPs...

My son liked the idea of the dragon with red and yellow wings turning into Chitty Chitty Bang Bang, so that means second prize goes to @Lego_Star.
There were lots of good answers, and it was tough to choose but my favourite was by @catwrangler, a really nice idea and well thought through.
Another one that caught my eye was the Monty Python one by @legomatt, I'm very fond of that film and it made me chuckle, so I'm adding a extra bonus '1' to the 3in1: I have a Boba Fett key ring looking for a new home and he's yours if you want him!
