I still don't think I can pick just two, so I'll go for two licensed:
I could easily have put most Darth Vaders instead of ET but despite being rather simplified, I'm so glad they did him. Theoden is probably the best minifigure ever made in terms of detail.
And two CMF:
And why is Deadpool such a prized fig? I don’t consider him one of my more exclusive ones.

#sw059 Zam Wesell (one of the first minifigs I picked up after I came out of my Dark Ages back in 2010)
#sw406 Oola (I like her coz she's green and quite cool)
#ava007 Katara (another minifig I picked up back in 2010)
#hp080 Professor Dolores Umbridge
Got the following on the Bricket jolly to Billund in August 2015. Spesh minifigs to remind me of a spesh trip :-)
Idea House minifig
Jan Beyer minifig
Yun Mi Antorini minifig
Kim E. Thomsen minifig
And...
Legopants who has been my Brickset Forum sigfig ever since I joined in April 2011 :-)
If we can count customs, I do have a custom Wat Tambor that is really high quality and looks great, but obviously isn't 100% Lego.
Sentimentally, my 3 Blacktron I figs from childhood. Nod to Lester and the Royal Guard as well, since I picked those up on my Honeymoon...
So easy it is.
So, back when I was a lad, me and my brother played with Space a lot. Him more than me as my parents had decided that I should have Town more than Space, and my brother deserved all the big Space sets, but I digress. So we played with the spacemen and got excited when they brought out new colours, but eventually my brother got a bit bored of Lego and I played with it more than him. I still didn't get the big Space sets (as now my brother didn't get them, my parents decided that no-one should have them) but I still got a few. And that was when these dudes came out:
Spacemen with zippers and helmets with visors but still with the space logo?! Awesome! I never thought the design would ever change and it blew me away that it had. Alas, it was shortly after when I descended into my DA and it was a while before I came back out...
So, when I returned to the hobby, I was mainly interested in the builds. But there was one range of minifigs I liked, and out of that range (rather unsurprisingly), it's this dude I liked the most:
Back before I ever thought they would start making minifigs of superhero characters (yes, I'm aware that this seems very naive these days) out of all the ones I imagined I would want, Captain America was right up there. And then, amazingly, they made him real. And it's a love story that continues to this day. He's just such a brave little dude...
Chosing toys was frequently a teaching moment (quality, playability, etc.), that I now inflict upon my children.
