I don't know why the Ship in a Bottle was reissued, but I think the Saturn V was reissued for many reasons. The ship is iconic, especially for an AFOL. I've watched a ton of podcasting and live streams from people's homes because of the pandemic and Saturn V is the one LEGO set I've seen the most displayed in people's homes. America and much of the world is entering a new space era and Saturn V is a good ship to keep people interested. I would welcome a Shuttle Expedition reissue as well. Other than that, Eiffel Tower like @Astrobricks sounds good too.
I'd love to see Grand Carousel come back.
And of course, it goes without saying, some remakes of classic space and castle would fly off the shelves.

And on top of that, I believe I've read in several places that most of those molds aren't around any more to bring out of retirement. To produce the old pieces again would require entirely new molds and tooling.

The one set that was a surprise to me that they reissued was the Vestas Turbine. I know it was popular, but didn't think it was THAT popular. The building was also a little dated, maybe that was on purpose. IDK, I just think that someone at LEGO likes Vestas or something, kind of like how they like Maersk.
As much as I would like something like an exact copy of Cafe Corner, I'd probably be happier with a tribute set that uses modern pieces and has an extremely similar exterior design but that has a full interior.
When I show my muggle friends the modular line, they are always impressed by the scale, but what really nails it in is when I open the Parisian Restaurant and show them the milk carton in the fridge.
Count me all in for interior details. They make the line feel so much more complete.
