I've had a similar question about the rubber bands over the course of time. And, even without a solid answer, have removed mine completely and have them in a sealed bag.
With rubber bands, its not always the tension that causes them to break or crumble, but the air simply drying them out over time.
I've considered just replacing them with non-Lego rubber bands to still get the look, but with no concern as to the lifespan.
Yes the majority of sets I own are large and that part count is strictly sets. It is also worth noting that >40 of those sets are CMFs.
