The #10194 Emerald Night from a few years ago has a great passenger compartment. You can easily change the color pattern too.
Other recent examples include the #10173, #7938, #4841, and of course the #10233
The parts lists on the instructions of course will be for the whole set, so you would have to manually modify the list to get only those parts needed for the car(s) you want to build.
You'll be able to find single cars or carriages for most train sets on either ebay or Bricklink. They can be found still new and in sealed bags with the separate instructions/stickers. An example is like this:

I have created the list with the train base part 92339 92339 while sometimes 4093a is used. I am not sure of the difference between those two.
If you create a part list for another car, please uploaded it on rebrickable :)
